Seitan is wheat protein aka gluten, most popularly prepared as "mock duck". I just simmered a batch for 2 hrs, and will now attempt to incorporate it into a recipe.
Anyone here have experience cooking/preparing this? |

i used to use it in stir fry all the time. (sauce: hoisin, soy sauce, sri racha, garlic, honey)
very tasty! |

Do you buy it or make it from scratch?
I found it reasonably easy to make it at home. It's quite firm to my surprise. I think I'll make several batches for different purposes. |

| Yeah, I made that stuff before. Just wheat gluten. Tastes like nothing unless you marinate and season it. All that gluten isn't so great for your health, I'll stick with tofu, tempeh or beans if I'm cutting down on animal protein. |

| From my understanding gluten is ok for people who aren't suffering from gluten allergies, or diseases which gluten can worsen. Many people have soy allergies too, plus it contains estrogen isoflavones which aren't really good for most people, save for menopausal women. |

| Yeah, all generally true. I'm not allergic to gluten but it makes me feel a bit bloated. I like the estrogen, since I like to wear dresses and makeup. |

| When you guys make this, do you add rice flour? Most recipes I've seen don't have that as an ingredient, but a few do.. I'm making some this weekend and don't know if the rice flour thing would make a big difference either way. |

I never did, I just used straight gluten and whatever else to flavor it.
I haven't made it in quite a while. It takes a lot of experimenting to get it right, at least in my case.
My latest thing is grains, legumes, and nuts. I've been eating quite a bit of lentils, almonds, pecans, quinoa, and farro. Techincally quinoa isn't a grain but rather a pseudo-grain, but it's one of the few plant sources that has all of the essential amino acids- a complete protein.
I also have taken quite a liking to my Ninja food processor. I've had it for a few years now, but only started using it recently. Lentils make for a great refried bean replacer (canned beans are very high in sodium) and add some tahini, lemon juice, and a pinch of salt (plus whatever other flavors you may enjoy) and you've got a great hummus. Lentils are my preferred legume due to it's short cooking time- about half an hour, and no pre-soaking required.
I've got plenty of other recipes, if provoked. |
